Ingredients:
2 cups basmati rice
1 pound chicken, beef or mutton (cut
into small pieces)
2 onions (sliced)
2 tomatoes (diced)
1 cup yogurt
1
tablespoon ginger paste
1 tablespoon garlic paste
2-3 green chilies (sliced)
1
teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1
teaspoon garam masala powder
Salt (to taste)
Oil (as required)
Fresh cilantro
and mint leaves (chopped)
Instructions:
Wash the rice in cold water and soak in
water for 30 minutes. Heat oil in a large pot and fry the sliced onions until
they turn golden brown. Remove the onions from the pot and set aside. In the
same pot, add the meat and fry until it turns brown. Add ginger and garlic
paste, sliced green chilies, diced tomatoes, and all the spices. Mix well and
cook for a few minutes. Add the yogurt and cook for a few more minutes until the
meat is tender and the gravy thickens. Drain the rice and add it to a large pot
of boiling water. Cook the rice until it is 70-80% cooked. Drain the water and
set the rice aside. In a large pot, spread a layer of rice at the bottom. Add a
layer of the meat and gravy mixture on top of the rice. Repeat the layers of
rice and meat, ending with a layer of rice. Sprinkle the fried onions, chopped
cilantro, and mint leaves on top of the rice. Cover the pot tightly with a lid
and cook on low heat for 20-30 minutes until the rice is fully cooked and the
flavors have blended together. Once done, fluff the biryani with a fork and
serve hot with raita and your favorite salad. Enjoy your delicious homemade
