Here's a recipe for making vegetable samosas:
Ingredients:
- 2 cups of all-purpose flour
- 1/4 tsp of salt
- 1/4 cup of vegetable oil
- Water
- 2 medium-sized potatoes, peeled and diced
- 1/2 cup of green peas
- 1 small onion, finely chopped
- 1/2 tsp of cumin seeds
- 1/2 tsp of coriander powder
- 1/4 tsp of turmeric powder
- 1/4 tsp of red chili powder
- Salt to taste
- Oil for deep frying
Instructions:
In a bowl, mix together the flour, salt, and vegetable oil. Add water gradually and knead the dough until it is smooth and pliable. Cover the dough with a damp cloth and set aside for 30 minutes.
Boil the diced potatoes and green peas until they are soft. Drain and mash them coarsely.
Heat 2 tablespoons of oil in a pan and add the cumin seeds. When they begin to splutter, add the chopped onion and fry until it becomes translucent.
Add the mashed potatoes and peas to the pan along with coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
Divide the dough into equal sized balls and roll out each ball into a thin oval shape. Cut the oval in half.
Take one half and form it into a cone, sealing the edges with a little water. Fill the cone with 1-2 tablespoons of the potato filling and seal the top of the cone with water. Repeat this process with the remaining dough and filling.
Heat oil in a deep frying pan. When the oil is hot, carefully add the samosas to the oil and fry until they are golden brown on both sides.
Remove the samosas from the oil using a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
Your vegetable samosas are now ready to serve
