Dum Pukht Recipe

 Dumpukht, also known as "Dum Pukht" or "Dum Biryani", is a slow-cooked meat and rice dish that is popular in Indian and Pakistani cuisine. Here's a recipe for Dumpukht:

Ingredients:

  • 1 kg bone-in mutton, cut into pieces
  • 2 cups basmati rice, washed and soaked in water for 30 minutes
  • 2 onions, sliced
  • 1 cup yogurt
  • 2 tablespoons ginger paste
  • 2 tablespoons garlic paste
  • 2 tablespoons red chili powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • 1/2 cup ghee or oil
  • 1/2 cup milk
  • Saffron strands
  • 1 tablespoon rose water
  • 1/4 cup chopped fresh coriander leaves

Instructions:

  1. In a large pot or dutch oven, heat the ghee or oil over medium heat. Add the sliced onions and sauté until golden brown.

  2. Add the mutton pieces to the pot and cook for a few minutes until the meat is browned on all sides.

  3. Add the ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala powder, and salt. Stir well to coat the meat with the spices.

  4. Add the yogurt and mix well. Cover the pot with a lid and let the meat cook over low heat for 30 minutes.

  5. Drain the soaked rice and add it to the pot with the meat. Add enough water to cover the rice by about an inch. Cover the pot with a tight-fitting lid and seal the edges with dough or a kitchen towel.

  6. Cook the dumpukht over low heat for about 45 minutes to 1 hour, or until the rice is cooked and the meat is tender.

  7. In a small bowl, mix together the milk, saffron strands, and rose water. Pour this mixture over the rice.

  8. Sprinkle the chopped coriander leaves on top of the rice. Cover the pot again and let it sit for 10-15 minutes to allow the flavors to meld.

  9. Serve hot with raita, chutney, or your favorite side dishes.
